Bosc: a non-sweet dessert

The desire to close your eyes and transport yourself into a place, a moment, a sensation. Bosc, from today on the tasting menu of "But the OROBIE... more"!


The Bosc, a celebration of the treasures hidden in the woods of our beloved Orobie, inspired by our wild philosophy, by the desire to talk about local and wild raw materials.

Each bite is a sensory journey through nature, with a moss sponge as the main protagonist. To create this dish, we went to our woods, to be able to convey authentic emotions.


A non-sweet dessert, the result of research and passion for the territory

We begin with the base of a moss sponge harvested in our woods, expertly dried to capture its unique, earthy flavour. It is a tribute to our local environment and its natural beauty, using wild and seasonal ingredients.




For a touch of bitter elegance, we add some drops of caramel to the Amaro del Ferdy. This bitter, with its distinct and slightly balsamic flavor, creates an intriguing harmony of flavors.

To make every bite stand out, we add pure blueberry. Their fruity and slightly acidic flavor adds a bright note to desserts, creating a perfect balance between sweet and acidic. For a silky and refreshing texture, we include a quenelle of wild yogurt.

These little bites balance the acidity with a creamy sweetness.

To recall the undergrowth and its variety of flavours, we created a crumble of porcini mushrooms and buckwheat, which gives the dessert a deep, earthy note. The walnut brittle and the thyme chocolate flakes (strictly harvested in the woods of our Orobie) add a further crunchy texture.

Finally, for a final touch of freshness: a sprinkling of mint, to bring the scent of the forest directly to the palate.

Our philosophy behind the creation of this dessert is based on the use of local and identifying ingredients, enhancing the seasonality and biodiversity of the Orobie. This dessert is a sensorial experience that will transport you to our woods and make you discover their secrets.
