Arlecchino

A complete dessert dedicated to Harlequin
Once at home, families made the most of what they had in order to create a dessert, the result of an imperative: don't throw anything away!

Seasonality and territoriality were an obligation, the few ingredients that arrived from outside were the result of a relative's trip, a distant visit or little else.


         
 
 
Every town had a village cake, a "smaiasa" in which a bit of everything went. With us in Lenna that back was the "Leadel.

A slightly dry cake made with polenta, apples from Val Brembana, fennel, honey and milk.
 
Hence the union with Arlecchino, symbol of our territory and of that dress - which has become synonymous with kindness - made from pieces of other clothes to help the poor Arlecchino who could not afford anything.
 
 
         
 
 
This dessert is made up of a compote of apples, raisins and walnuts, polenta biscuit, chestnut and lime honey parfait, milk and honey foam, the Arlecchino colors are made with dehydrated forest powders.
 
 
  

 
 

A complete dessert, which combines the memory of tradition with a pastry making technique that makes it contemporary, without added sugars but only natural ones, without flights of fancy but a beautiful homage to the Harlequin mask.
