Fidech (che bu)

Fresh spaghetti cooked in whey, butter, pepper, marinated and smoked liver, nettle sandwich

 

 

The meaning:

valorise poor products considered production "waste", making them noble protagonists. Liver and whey together on stage.
 
 
Fresh homemade spaghetti with eggs from wild hens - hens that live in the Trentino mountains free to scratch every day - which we cook in unsalted whey.
 
 
 
 

A knob of butter, a pinch of pepper and we sauté it in the pan.
A wonderful cream is born with which we pamper our spaghetti.




  
 
    

We grate an old cow's liver, marinated for 2 months, then smoked and matured.

 
  
 
 
 

Finally we serve our "Fidec che bù" with a bitter nettle "sandwich" to remove the flavour.
